Ingredients

6 eggs

3/4 cup self-raising flour

3 zucchinis, grated

2 carrots, grated

150grams corn kernels

3/4 cup cheese, grated

1 small onion, finely chopped

olive or canola oil, to grease dish
Method
- Preheat oven to 180 degrees.
- Beat the eggs, then slowly add flour, zucchini, carrot, corn, cheese and onion.
- Pour the egg mixture into a greased baking dish.
- Bake for 30 to 40 minutes or until slightly browned on top and set in the centre.
- Cut into slices.
Tips
- Suitable to make ahead of time and freeze
- Can be served hot or cold
- Serve with a salad or vegetables to boost vegetable intake and to add colour to the plate
