Ingredients
- 1/4 cup olive oil
- 1 onion
- 2 garlic cloves
- 1 bunch of spring onions
- 1.2kg of silverbeet - remove leaves from stalks and chop all
- 2 tablespoons of chopped dill
- 250g fetta cheese crumbled
- 150g ricotta cheese
- 3 tablespoons of parmesan cheese
- 4 eggs lightly beaten
- 12 sheets of filo pastry
- 120g of salted butter melted
- 1/2 teaspoon of grated nutmeg
Method
- Pre-heat oven to 180 degrees Celsius
- Heat oil in frypan and add onion, spring onions and garlic. Cook for one minute until soft, then add silverbeet and dill. Cook for 1-2 minutes. Drain in a colander and cool.
- Mix cheeses, egg, nutmeg, salt and pepper in with vegetables.
- Brush a media sized baking dish with butter. Lay one sheet of filo on the base and sides and brush with butter. Repeat with 5 more sheets. Spread mixture over the top. Cover with remaining filo, brushing each sheet with butter. Trim excess pastry with scissors and tuck edges into the side of the dish. Brush top with butter and score diamond patterns.
- Bake for 45 minutes or until golden. Rest for 10 minutes and serve with remaining chopped dill sprinkled on top.
