Ingredients
- 700grams plums, pitted and halved
- 1 teaspoon lemon zest
- 1 egg
- 3 tablespoons canola oil
- 1/2 cup reduced-fat milk
- 1 teaspoon vanilla extract
- 1/2 cup wholemeal self-raising flour
- 1/2 cup white self-raising flour
- 1/3 cup sugar
Method
- Preheat oven to 180°C fan-forced
- Remove pits from plums if desired and add to the baking dish. Sprinkle over the lemon zest.
- Crack egg into a large bowl and lightly whisk with a fork. Mix in oil, milk, and vanilla essence.
- Add flours and sugar and mix until combined.
- Drizzle the batter over the plums.
- Bake for 20 minutes or until top is golden.
